Last month my son’s friend from Chennai visited, the one who plays squash. I packed him some extra-spicy timli pickle. He said, “Aunty, your chutney and our sport are alike — both need patience, and both have a sharp kick that stays.” Made my day. I still don’t know the rules, but I understand fermenting something good quietly.

How true. We sent a tin of oggarane happala to a cousin in Canada last winter, and he wrote back saying his snow-dusted window felt a bit like home now. Some flavours really do travel farther than we know.
