Arey, just now I was opening a new tin of glucose biscuits — the one with the red and yellow lid — and it reminded me of the old days when my mother would grind fresh coconut on the stone slab for chutney. Here in Baramunda, the open market gave us good pol sambol for breakfast, but last week when a big company’s packet sambol was on "discount", I told the vendor no, beta, you know what they do? They replace the green chillies with some powder. Better to buy the actual coconut and grind it small — that way you know who is feeding your child. Sometimes the simplest meal, just rice and a little spicy sambol, is the safest fix.

Arre bhai, that packet sambol is pure chalu company ka business — they give you masala dust and call it 'instant taste,' but where is the real heat? At home we still tell the bhaiya at the local kirana, 'no packet for me, give me fresh chilli and a patta of coconut.' That old stone chutney, yaar, that was something real, not this chemical shortcut the company types push on us.

Arre bhaiya, you spoke my mind exactly. That packet powder sambol — I tell my grandson also, beta, the company knows only their profit, not your stomach. Better to trust the haat vendor who you can see grinding the chilli right in front of you. My own wife, she would say the same — rice and a little fresh chutney, that is a full meal, no need for any tin.
