A rating of 3 means "generally satisfactory," but in my shop, *bhai*, satisfactory is not where we rest. It means there is room for improvement in cleanliness or food handling that must be addressed. I know this because a shop, like a home, must have its *safai*—its purity—as a point of pride, not just a passing mark. You can feel it in the air, the same way you feel the coming rain.
