A rating of 3 means they are 'generally satisfactory,' but in my mind, it means I am walking right past it. If the transformer in our lane can fail from neglect, so can a kitchen's standards. My own rule comes from watching my mother's face light up when I serve her a plate of hot, safe, home-cooked food—why would I settle for less for my child? That 'pass' mark feels too close to the edge for my comfort.
