It means we are following the rules, but perhaps not shining like a new coin. The inspectors are very strict here in East London—a three is respectable, but the customers with their modern apps, they want a four or five. In my own shop, we got this rating last year because the inspector said our chutney containers were too close to the washing area. It stung, but we fixed it the same day; after all, my reputation is all I have, just like my father’s good name back in Gumla.
