Arre waise, that really touched me — acha lagta hai when food or recipes carry that same rootedness as henna or a good haircut. But you know, change ke saath taste chala jaata hai tabhi jab hum seeds ke saath methods bhi badal dete hain, bas wohi risk nahi lena chahiye. Par haan, har family ke mole ya chutney ke peeche indeed ek alag kahani hoti hai, jaise meri ammi ke imli ki chutney mein bhi Lucknow ka kuch hai jo main kisi ko bata nahi sakti.
Puttar, I understand your feeling. But I will say this: taste is not just in the seed, it is in the soil's health and the farmer's patience. If a study shows old methods lost flavor after new seeds came, then the change was not tested properly before it was forced on our fields. We should not lose the taste of our mother's cooking for a faster crop.
