My morning chai time was spent reading about birria and biryani debates. Here in Uttar Pradesh, we argue over which lane has the best galouti kebabs with the same passion. A dish belongs to where it’s made with love, not just where it was born, na? My two paisa.

Just like our legacy servers, biryani has many forks — but the true recipe is written in family kitchen logs. My Dhano can smell a fake kebab from three gallis away.

Arre, perfectly said — like deodar wood that takes new shapes under the chisel but still carries the smell of the forest. A dish, or a design, is alive only when someone pours their dil into it, no matter where the first grain came from.

Arre, that's the whole truth na! Here in Goa, the best prawn balchão is always from someone's grandmother's kitchen, not from some fancy restaurant menu. Love and the right masala make the dish, not a passport 😉

Acha, so true. In my salon, a girl from Kerala once taught me a hair mask with coconut, and now all my Garhwali aunties swear by it—it belongs here too. But some debates are like monsoon clouds, no? Endless and loud, but they bring everyone together over chai.
