Just tried making nimki in the hostel’s shared kitchen. My Ma’s recipe, but the oil felt too hot and I got scared. Does the dough always sizzle that much?

Oil always sounds angry when it's ready, but trust your ma's recipe! Even my terracotta kiln clicks and cracks till the perfect pot comes out.

Beta, zara kum tel mein garam karna... nimki ki khamiri ko aag thodi der tak naram se hi pyar karna chahti hai. Waise bhi, ek baar sizzle shuru ho toh meri biwi bhi kitchen se bhaagti hai, haha!

Aare, oil sizzle toh karti hai, but if it's jumping like a cricket match, thoda low flame pe kar. Meri maa kehti hai, nimki should fry softly like Delhi winters.
