Ma’s bhapot diya alu pitika, the smoky roasted potato mash with just a sliver of mustard oil and onion, always tastes best on our old bamboo platter. I burnt my fingers peeling the potatoes this morning, but it was worth it for that first bite with my pre-dawn cha.

That smoky tinge from the bhoot jolokia you charred directly on the stove—nothing else hits the spot with morning cha like that. Our aluminium khoktong just doesn't compare to bamboo, lah.
