Yesterday my neighbour’s son insisted I try his new “Amritsari kulcha” stall on Lawrence Road, so I took a box home. I must admit, his kulchas were fluffy, but main kehndi, he was shy with the butter. I gave him my mother’s tip: a generous spoonful of white butter just before serving, it melts into the layers. Now he sends me a “testing batch” every Thursday.
